I like to think that I know my way around the kitchen. However each time I visit with chef Jessica Hansen of The Kitchen at Middleground Farms, I find out I have so much more to learn as she shows me something new. The good part is I end up with new recipes to make in my own home, much to the delight of family and friends.
Not only is the food amazing, but the views are beautiful. For our latest Live Video we made our way to her picturesque Wilsonville farm where she showed me how to take already delicious goat cheese and bread and fry it. This delectable hunk of goodness was then placed atop a salad adorned with a fresh berry vinaigrette she also taught me how to make. The vinaigrette had just the right amount of acidic bite, achieved from her own special champagne vinegar combined with a selection of fresh berries picked just a few hours prior. It doesn't get much fresher than that! When the salad combines with the creamy, savory flavor from the goat cheese, the result can only be described as amazing.
