Creativity is not lacking here. Try the Heritage Beer Series at Coin Toss Brewing, where you can have a pint of beer based off of an original recipe from President George Washington. The brewmaster at Breakside Brewery in Milwaukie experiments with ingredients like Peruvian chilies and kumquats.
